-2 cups whole milk

-1 cup heavy cream

-2 cups sugar (or vanilla sugar)

-Pinch of salt

-3 egg yolks

-1/2 tsp vanilla extract (or 1 tsp vanilla bean paste)

Preparation:

Combine the milk, cream, sugar and salt into a saucepan. Bring to a boil over medium heat. While you are waiting for the mixture to boil, whisk together the egg yolks in a large bowl until well combined. Once the mixture comes to a boil, slowly pour half of it over the egg yolks while whisking constantly. This will temper the eggs so they do not cook when they are added back into the hot liquid. Add this mixture back into your saucepan with the rest of the liquid and stir constantly over medium heat until thickened. Once thickened, remove from heat and allow to cool slightly then stir in your extract or paste. Place plastic wrap over your bowl, making sure it touches the surface of your custard to keep a skin

The first step you need to do is prepare the bowl with the cover. You can either use a glass bowl or any kind of plastic or metal bowl with a lid. After that, you should add the heavy cream into it. You can also use other stuff such as sour cream, soya cream, double cream or any other type of cream. 

Then you need to pour in the sugar and vanilla extract into the bowl together with the heavy cream, but don’t mix them yet! You should shake them up first in order to dissolve the sugar better. If you want to know how much sugar to use, it depends on how sweet you like your ice cream to be and also on what kind of ice cream maker you’re using (if any). Now, if everything is dissolved, put the cover on and shake it for about 3 minutes until it gets fluffy and light like whipped cream. This will also warm up your ingredients before putting them into your machine

The first thing to do is to find the vanilla pods that you want to use. Some people go for the less expensive Tahitian or Mexican vanilla, but I recommend the Madagascar vanilla bean. They have a great flavor and are much higher quality than their competitors. I also like to get organic vanilla beans when possible.

Turn on your stove and wait until it gets hot (don’t turn it on too high or it will burn). Put the vanilla beans in a pot and cover them with water. Add half a cup of sugar and stir everything together gently until the sugar has dissolved into the water. Then if you have an actual vanilla pod extractor, use that to extract all the goodness from your vanilla beans. If you don’t have one just use a wooden spoon or similar object to carefully stab into each one of your beans every so often. This will help you extract all of their flavor as well as break up any clumps that may have formed. In about 15 minutes, take out your beans with tongs and put them in a bowl – they should be covered in black liquid at this point – then put them aside while you work on the cream

A creamy and delicious ice cream. I didn’t want to use real vanilla extract, so I had to go with this method. It’s not a bad way to go.

Ingredients:

2 cups heavy cream

1 cup whole milk

1/2 teaspoon vanilla bean powder (or 1 teaspoon vanilla extract)

1/2 cup sugar (more or less, depending on how sweet you like it.)

Instructions:

Combine the cream, milk, and sugar in a saucepan and heat over medium-low heat until just starting to steam (don’t let it get any hotter). Do not let it boil. Once it is steaming, turn off the heat and stir in the vanilla. Let cool for about 20 minutes.

Place plastic wrap over the open end of your storage container so that it sits against the surface of the cream mixture. Pour in the cooled mixture and place in freezer for about 3 hours. Enjoy!
