Taus’ talent for making gourmet sausages is well known within the New York City food community. For years, diners have flocked to his food truck, The Wurst Mobile, to sample his creations, which include wild boar links and duck-and-bacon sausages with cherry chutney.

“I always knew there was an audience that would appreciate our kind of waffles,” said co-owner Aaron Butler. “But I never expected it to be this big.”

He attributes Folk Art’s success to its willingness to embrace new ideas. “If something doesn’t work, we change it,” he said. “We’re not going to try to make something work just because it’s supposed to be that way
