I love the taste of sweet and savory together and in this recipe, the lemon and thyme complement each other beautifully. The thyme adds a slightly floral note to the dish, but it is subtle. I used a mixture of wild and regular lemons for this recipe but I would recommend using all wild lemons if you can find them. Preheat your oven to 350 degrees F.2. Peel your potatoes in thin slices and set aside.3. Slice your onions into very thin pieces and place them in a large bowl with the potatoes, the olive oil, the lemon juice, the chopped parsley leaves, salt and pepper (to taste), and your fresh thyme sprigs. Toss everything together until it is evenly coated with oil and herbs.4. Spread out your mixture on a baking sheet lined with parchment paper
